The multi-course banquet highlighted regional ingredients transformed through both traditional and modern culinary techniques. Guests were served starters that included Khandvi Mille-Feuille—steamed gram-flour rolls tempered with mustard, coconut, and curry leaves, accompanied by Kesar mango, micro-greens, and a yogurt dressing—alongside Khumb Galouti, pan-grilled mushroom kebabs paired with mint pearls over sheermal bread.

The main courses brought together rich regional specialties, led by Gucchi Marmik, featuring Himalayan morel mushrooms and asparagus simmered with saffron, raisins, and mamra almonds, served alongside Paneer Lababdar. The dinner followed a full schedule of bilateral talks and working sessions on the summit’s first day. Attendees, including Chinese President Xi Jinping and Russian President Vladimir Putin, formally adopted the New Delhi Declaration earlier in the day. India is currently serving its fourth BRICS chairship under the theme "Building for Resilience, Innovation, Cooperation and Sustainability," marking two decades since the founding of the grouping.
