Perishable raw materials were stored in the open. Rusted and inadequately cleaned containers were used for raw and semi-finished products. Significant pest infestation was noted, along with inadequate pest-control measures. These included ineffective fly control, absence of proper rodent control, and openings or windows without insect-proof mesh.
Waste, old stock, rejected lots and scrap had accumulated in food-handling areas. Inspectors also found rusting equipment, flaking paint, dampness and broken floor tiles. Required food safety records and systems were not properly maintained. These covered water and finished-product testing, time-temperature monitoring, calibration, preventive maintenance, mock recall, consumer complaints, training and audit records.
